Sardine Cake with Rice

This Sardine Cake with Rice recipe will surprise you with its ease and flavor. Sardines are one of the most nutritious fish, and have a very characteristic taste and aroma. For the dumpling recipe, it is combined with rice and eggs, which have more neutral flavors, giving a special balance to the dish.

Dough Ingredients:

  • 4 eggs

  • 500 g of cooked rice

  • 400 ml of milk

  • 150 g of corn starch

  • 200 ml of oil

  • 1 tablespoon of baking powder

  • dried oregano

Stuffing Ingredients:

  • 1 kg of Copacol Sardines

  • 300 g of ready-made tomato sauce

  • 1 large onion cut into wedges

  • Oregano and dried thyme to taste

  • 200 ml of vinegar

  • 1 liter of olive oil

  • 200 ml of water

  • Salt and black pepper to taste

__ __ Preparation       mode

Filling:

  1. Clean and season the Whole Copacol Sardines with salt and pepper.

  2. In a pressure cooker, place the sardines, vinegar, onion cut into wedges, olive oil, oregano, dried thyme and water.

  3. Let it boil for 2 hours. Unplug and let cool before opening.

  4. Remove the sardines and crumble them into the ready-made tomato sauce, season with salt and pepper, and use for the stuffing. 

Pasta:

1. In a blender, beat the eggs, cooked rice, milk and oil.

2. When the mixture is very homogeneous, turn off and mix by hand the corn starch and finally the baking powder.

3. Place half of the dough in a greased and floured shape. Spread the filling and cover with the rest of the dough. Sprinkle dry oregano.

4. Bake in a preheated oven at 180ºC for 30 or 40 minutes.
